Carbon Dioxide
A harmless gas that is the source of the bubbles in fizzy drinks. It is a by product of the production of alcohol from sugar, and can be both desirable or undesirable depending of the drink is question i.e. a flat champaign would be insipid, but a fizzy barolo would spoil the mouth feel of this great red.
